Balsamic Marinated Chicken

This is a referral to an AARP link, but I tried it both broiled & baked, and really enjoyed it so I thought I'd share.

I once had this great balsamic chicken salad...it was with huge chunks of fresh mozzarella and big pieces of roasted peppers.

was just great.

Balsamic marinated chicken sounds like a tasty choice! I'm always on the lookout for new marinades to jazz up my chicken dishes. One thing I've found with balsamic marinades is that they add a nice depth of flavor to the chicken. The acidity of the balsamic vinegar helps tenderize the meat, making it super juicy and flavorful. I like to let my chicken marinate for at least a few hours, or even overnight if I have the time. It lets the flavors sink in and gives the chicken that extra oomph. Pairing balsamic marinated chicken with some roasted veggies or a fresh salad can make for a delicious and healthy meal.
